What we test for
The FSSAI standard for honey mandates 5 parameters. We test 8.
HMF (Hydroxymethylfurfural)
High HMF indicates overheating or adulteration with sugar syrup.
Moisture Content
Excess moisture causes fermentation. Pure raw honey naturally stays below 17%.
Sucrose Content
High sucrose = added sugar. Natural honey sucrose is <5% due to enzyme action.
Diastase Activity
Diastase is a natural honey enzyme. Low activity indicates overprocessing or adulteration.
Lead (Heavy Metal)
A measure of environmental purity at the hive location.
C4 Sugar (NMR)
Isotope ratio test that detects corn syrup or cane sugar addition at the ppm level.
Antibiotic Residues
We test for streptomycin and tetracycline — common antibiotics misused in apiaries.
Colour & Clarity
Consistent with the stated floral source — no artificial whitening or browning.
